Kodo Millet Khichdi
Ingredients:
1 cup kodo millet (washed and soaked for 20 minutes)
½ cup moong dal (split yellow lentils)
2 tbsp oil or ghee
1 tsp cumin seeds
1 onion, chopped
1 tomato, chopped
½ cup mixed vegetables (peas, carrots, beans)
½ tsp turmeric powder
Salt to taste
3 cups water
Fresh coriander leaves for garnish
Instructions:
Heat oil: Heat oil or ghee in a pressure cooker. Add cumin seeds and let them splutter.
Sauté vegetables: Add onion and cook until soft. Add tomato and mixed vegetables, and sauté for a few minutes.
Add millet and dal: Add soaked kodo millet and moong dal. Mix well with turmeric and salt.
Cook: Add water and pressure cook for 2–3 whistles (or simmer in a pot until soft and mushy).
Serve: Garnish with fresh coriander and serve hot with pickle or yogurt.
