Kodo Millet Khichdi

Ingredients:

  • 1 cup kodo millet (washed and soaked for 20 minutes)

  • ½ cup moong dal (split yellow lentils)

  • 2 tbsp oil or ghee

  • 1 tsp cumin seeds

  • 1 onion, chopped

  • 1 tomato, chopped

  • ½ cup mixed vegetables (peas, carrots, beans)

  • ½ tsp turmeric powder

  • Salt to taste

  • 3 cups water

  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil: Heat oil or ghee in a pressure cooker. Add cumin seeds and let them splutter.

  2. Sauté vegetables: Add onion and cook until soft. Add tomato and mixed vegetables, and sauté for a few minutes.

  3. Add millet and dal: Add soaked kodo millet and moong dal. Mix well with turmeric and salt.

  4. Cook: Add water and pressure cook for 2–3 whistles (or simmer in a pot until soft and mushy).

  5. Serve: Garnish with fresh coriander and serve hot with pickle or yogurt.
