Bundelkhandi Gosht Curry

Ingredients:

  • 500 g mutton (goat meat), cut into pieces

  • 3 tbsp oil or mustard oil

  • 2 onions, finely chopped

  • 2 tomatoes, pureed

  • 1 tbsp ginger-garlic paste

  • 2 green chilies, slit

  • 1 tsp turmeric powder

  • 1½ tsp red chili powder

  • 1 tsp coriander powder

  • ½ tsp garam masala

  • Salt to taste

  • 2 cups water

  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil: Heat oil in a pressure cooker or deep pan. Add chopped onions and fry until golden brown.

  2. Add spices: Add ginger-garlic paste and green chilies. Sauté for a minute. Add tomato puree, turmeric, red chili powder, coriander powder, and salt. Cook until oil separates.

  3. Cook mutton: Add mutton pieces and mix well. Cook on medium heat for 5–7 minutes.

  4. Pressure cook: Add water, cover, and pressure cook for 4–5 whistles (or simmer in a pan until the meat is tender).

  5. Finish: Sprinkle garam masala and simmer for a few minutes.

  6. Serve: Garnish with fresh coriander and serve hot with roti or rice.
