Bundelkhandi Gosht Curry
Ingredients:
500 g mutton (goat meat), cut into pieces
3 tbsp oil or mustard oil
2 onions, finely chopped
2 tomatoes, pureed
1 tbsp ginger-garlic paste
2 green chilies, slit
1 tsp turmeric powder
1½ tsp red chili powder
1 tsp coriander powder
½ tsp garam masala
Salt to taste
2 cups water
Fresh coriander leaves for garnish
Instructions:
Heat oil: Heat oil in a pressure cooker or deep pan. Add chopped onions and fry until golden brown.
Add spices: Add ginger-garlic paste and green chilies. Sauté for a minute. Add tomato puree, turmeric, red chili powder, coriander powder, and salt. Cook until oil separates.
Cook mutton: Add mutton pieces and mix well. Cook on medium heat for 5–7 minutes.
Pressure cook: Add water, cover, and pressure cook for 4–5 whistles (or simmer in a pan until the meat is tender).
Finish: Sprinkle garam masala and simmer for a few minutes.
Serve: Garnish with fresh coriander and serve hot with roti or rice.
